Chess Pie

This delicious Chess Pie is served with an oatmeal cookie chaff.  So proficient,  some people phone call it Crevice Pie. It is that addictive!  Just 1 bite and you will be hooked!

I was reading an commodity in the Oregonian FoodDay when I saw a recipe about the Cleft Pie they were selling at the Momofuku Bakery and the Milk Bar in Manhattan.  They were selling for $44 a pie.   The title of the article is what caught my attention. "Y'all'll get hooked on Cleft Pie".

After a niggling investigating, I discovered that this pie was but a traditional chess pie, made with butter eggs, sugar and vanilla.  But in that location was one delicious difference.  This pie had a crust fabricated from oatmeal cookies!  An oatmeal cookie crust!  Who tin turn that down!  The bakery of course makes their own oatmeal cookies and I used this recipe, merely if you are brusk on time y'all could cheat and use store bought oatmeal cookies to make the crust.

This pie is delicious chilled and only as good warm.  The recipe makes ii pies, and so you can endeavor information technology both ways!  One bite and you will understand why they call this Chess Pie I "Crack" pie.  Yous will not be able to stop at ane bite.   I wanted to eat the entire pie by myself.

Baking Tips for Chess Pie

The pie will seem undercooked when you remove it from the oven.  It will be aureate brown on top, just all the same jiggly.  As well, The pie will be puffy when it comes out, merely will autumn and flatten out every bit information technology cools.  Don't worry, it is supposed to do that.

The big debate though is whether you consume it warm or chilled?  I've eaten it both ways and information technology is delicious both means but I prefer it warm. Cookie for crust:

  • 2/iii C plus 1 Tbsp all purpose flour
  • Scant 1/8 tsp baking pulverisation
  • Scant 1/eight tsp. blistering soda
  • 1/4 tsp salt
  • 1/ii C butter softened
  • ane/iii C firmly packed calorie-free brown sugar
  • 3 Tbsp sugar
  • one egg
  • scant 1 C old fashioned oatmeal uncooked

Crust:

  • Crumbled cookie for crust run into above
  • one/4 C butter
  • 1 i/two Tbsp firmly packed brown sugar
  • 1/eight tsp table salt

Filling:

  • 1 tsp vanilla
  • 8 egg yolks
  • 2 prepared crusts come across above

  • Preheat oven to 375 degrees

  • In a medium bowl, sift together the flour, baking powder, blistering soda and salt – yes I sifted it!

  • In your mixer using the paddle zipper beat the butter, brown sugar and sugar until light and fluffy

  • Whisk the egg into the butter mixture until fluffy and incorporated

  • With the mixture running, shell in the flour mixture a niggling at a fourth dimension until totally combined

  • Stir in the oatmeal until well incorporated

  • Spread the mixture into a ix x thirteen inch baking pan and bake until aureate brown and set, about twenty minutes

  • Remove from oven and cool on rack
